Agave Mexican Restaurant has opened in Boulder.  They can be found at 2845 28th Street in the

location recently vacated by La Mariposa Restaurant.  Agave's menu is not what you would typically expect from a Mexican Restaurant.  Their traditional plates include Agave Enchiladas, Flautas, Carnitas (Slow Braised all Natural Pork), Nopal Relleno (Fresh Cactus topped with Chicken Breast, Marinated in Vegetable Oil, Lime Juice, Garlic and Parsley, Garnished with Cheese) and many other interesting dishes.  They have a large selection of items from the grill including Carne Asada, Steak Adobado, Porterhouse, Pollo Asado and More.  They also have a wide variety of items from the sea (del mar) including Filets de Pescado a la Tequila (Catfish Filet covered in Tequila and Breaded with Corn Meal served over a be of Habanero Sauce), Tacos de Camaron (Shrimp Tacos), and Camarones Flambe (Shrimp Sauteed in Garlic and Chile, flambeed with Gold Tequila and finished with Butter).  Naturally, being in Boulder, they have a large selection of vegetarian dishes including Tacos de Aquacate (Three open faced Avocado Tacos), and Nopalitos con Chile Rojo (Fresh Cactus simmered in their homemade Red Chile Sauce).  They also have Molcajetes (their house specialties), Parallidas for 3-4 People (An assortment of Meats or Seafood served on a hot parilla (or grill)) and a wide variety of desserts.
